  1. Lay one papaya leaf in a bowl, put the 600 g of beef on top, crush another papaya leaf until broken and place it over the meat, then wrap with a third leaf.
  2. Chill in the refrigerator for 1 to 2 hours.
  3. Discard the papaya leaves, there is no need to wash the meat.
  4. Cut the beef into small cubes.
  5. Put 15 shallots, 1 cm ginger, 8 chopped garlic cloves and 2 cm galangal into a blender.
  6. Add 3 tbsp palm sugar, 3 tbsp roasted coriander seeds, 50 ml thick tamarind water and a splash of water, then blend smooth.
  7. Heat a pan with 2 tbsp vegetable oil and add the spice paste.
  8. Cook until the liquid reduces and the paste is done.
  9. Season with 1 tsp beef stock powder, 1 tsp salt and 1 tsp white pepper.
  10. Pour in 7 tbsp sweet soy sauce and stir until even.
  11. Mix the paste through the beef and marinate in the refrigerator for about 1 hour.
  12. Thread 4 to 5 cubes of beef onto each skewer, about 40 skewers in total.
  13. Slice 1 tomato lengthwise.
  14. Slice red and green bird's eye chilies to taste and 3 shallots thinly for the sambal.
  15. Grill the satay over charcoal or on the stove, turning so both sides cook through.
  16. Serve with the tomato chili sambal, kaffir lime and sweet soy sauce.
