  1. Rinse 200 g of peanuts clean.
  2. Pour a generous amount of vegetable oil into a wok, add the peanuts before the oil is hot, then fry over the lowest heat while stirring constantly for 10 to 12 minutes.
  3. Lift out the peanuts and put them on a plate lined with kitchen paper.
  4. Blend 12 curly chillies, 2 cloves of garlic, and 6 cloves of shallot with a little vegetable oil.
  5. Heat a wok with 80 ml of vegetable oil, then add the blended spice paste.
  6. Tear 3 kaffir lime leaves, add them to the wok, then saute until fragrant.
  7. Once the peanuts are no longer hot, blend them to a sandy texture as fine as you like.
  8. Add the ground peanuts into the wok with the sauteed paste and stir until combined.
  9. Add 300 ml of water.
  10. Mash 200 g of honey sweet potato with a fork, then transfer it into the wok.
  11. Stir everything until really smooth, and keep stirring so the bottom does not burn.
  12. Add 100 g of palm sugar, 1/2 tsp salt, and 1 tsp mushroom bouillon.
  13. Cook the peanut sauce until the oil separates out.
  14. Adjust the thickness by adding 150 to 250 ml of water.
  15. Turn off the heat and the peanut sauce is ready to serve.
