Risoles with Peanut Sauce

Steps

  1. Cut the peeled potatoes and carrot into small cubes.
  2. Melt the margarine, then saute the chopped garlic until fragrant.
  3. Add the diced potato and carrot, then the salt, pepper, mushroom seasoning, and sugar, and stir to combine.
  4. Pour in the water and milk, cover the pan, then cook until the potato and carrot are tender and the liquid has reduced.
  5. Stir in the celery leaves and spring onion, then take it off the heat and let it cool.
  6. Roast the peanuts in an air fryer at 180 degrees for 15 minutes, stirring once partway so they cook evenly.
  7. Grind the roasted peanuts until fine.
  8. Grind the curly red chillies, shallots, and garlic together with a little water.
  9. Saute the spice paste with the kaffir lime leaves until fairly dry.
  10. Pour in the thin coconut milk, add the palm sugar and salt, then stir until the palm sugar dissolves.
  11. Add the ground peanuts and the vinegar, cook until it boils, add sweet soy sauce if the colour still needs improving, then take it off and transfer to a container.
  12. For the risoles wrappers, put the flour, tapioca flour, and salt into a bowl and stir to combine.
  13. Add the eggs and vegetable oil, stir, then add half the measured water and stir until the batter is smooth.
  14. Pour in the remaining water, stir well, then strain the batter to make sure no flour lumps remain.
  15. Cook thin crepes in a lightly oiled frypan over low heat, stirring the batter each time before pouring, and lift each wrapper out once the edges start peeling away.
  16. Place the potato filling and a piece of boiled egg on a wrapper, fold it up tightly, then fry over medium heat until browned and serve hot with peanut sauce poured over.
