Ingredients

Wrapper ingredients:

Filling:

Steps

  1. Prepare a bowl and add 500 gr of wheat flour, 50 gr of tapioca flour, 1 tsp of salt, and 1 tsp of powdered broth.
  2. Add 1 tbsp of cooking oil and 1 egg.
  3. Add 1100 ml of water then stir the batter until evenly combined.
  4. Strain the batter to make sure there are no lumps, then stir again until evenly combined; the batter should be fairly thin.
  5. Take about 3 to 4 ladles of the batter to use later as the dipping batter, then set it aside.
  6. Turn the heat to its lowest then heat the frying pan.
  7. Once the pan is hot, pour in enough batter, then lift and swirl the pan so it spreads; do not pour too much so the wrapper stays thin and does not crack when folded.
  8. Once the surface of the wrapper is dry and the edges start to lift from the pan, remove the wrapper by flipping the pan over.
  9. Stack the wrappers and repeat until all the batter has been cooked, which keeps them moist.
  10. Use the lowest heat so the pan does not get too hot, because if it is too hot the batter will not spread easily, making the wrapper thick and prone to cracking when folded.
  11. Prepare 500 gr of mayonnaise, mix it with 100 gr of sweetened condensed milk, and stir until evenly combined.
  12. Take one wrapper and place a piece of sausage on it.
  13. Place a boiled egg on top of the sausage.
  14. Spoon over as much mayonnaise as you like.
  15. Fold the wrapper into an envelope.
  16. Roll up the remaining wrapper, then press and seal it.
  17. Repeat until all the wrappers have been filled.
  18. Dip the risoles into the dipping batter you set aside earlier.
  19. Let them drain briefly, then roll them in breadcrumbs so they are evenly coated all over.
  20. Arrange the risoles in a container and repeat until all of them are coated.
  21. Before frying, put the risoles in the freezer for about 30 minutes so the breadcrumbs stick; these risol mayo keep for up to 1 month in an airtight container in the freezer.
  22. Heat oil in a wok until it is really hot, then add a batch of risoles.
  23. Fry over medium heat until golden brown, turning them so they cook evenly.
  24. Once golden, lift the risoles out of the oil and drain them on oil-absorbing paper.
