  1. Mix 300 g of ground pork with 2 egg whites, setting the yolks aside for the final topping.
  2. Add 1 tbsp of fried garlic and the white part of 1 spring onion stalk cut into small pieces.
  3. Add 1 tbsp sesame oil, 3 tbsp fish sauce, 1 tsp sugar, 1/2 tsp salt, 1/2 tsp white pepper, and 1/2 tsp mushroom bouillon.
  4. Stir until the meat and egg whites are thoroughly combined and the texture turns slightly sticky, then set it aside.
  5. Wash 300 g of preserved mustard greens and squeeze out the water, then cut the leaves and stems into small pieces.
  6. Smash and finely chop 2 cloves of garlic.
  7. Heat a wok with 2 tbsp of vegetable oil, then saute the garlic until fragrant.
  8. Add the cut preserved mustard greens and stir-fry briefly.
  9. Add 2 tbsp fish sauce, 1 tsp sugar, 1/2 tsp white pepper, and 1 tbsp cooking rice wine, then turn off the heat.
  10. Spread the mustard greens on a heatproof plate and make a small hole in the middle.
  11. Stir the meat mixture again, then add 50 g of tapioca starch and mix until even.
  12. Spread the meat over the mustard greens so it covers them, then make a small hole in the middle so it cooks faster.
  13. Place the reserved egg yolk in the middle.
  14. Steam in a steamer with boiling water for about 20 minutes until cooked, then turn off the heat and serve.
