  1. Melt the dark chocolate couverture with the unsalted butter and salt in the microwave, then set it aside until it is no longer hot.
  2. Crack one egg into a bowl and add the castor sugar and vanilla.
  3. Whisk until foamy and half aerated with the sugar dissolved, so the mixture is pale but still runny. This is what gives the brownie cookies their shiny crackled top.
  4. Add the cooled chocolate and butter mixture to the egg mixture and stir until fully combined.
  5. Sift the medium protein flour, cocoa powder and baking powder into the batter.
  6. Mix only briefly, until the flour is hydrated and no dry flour remains. Overmixing makes them tough.
  7. Chill the brownie dough until it firms up.
  8. For the cookie dough, mix the cooled melted unsalted butter with the castor sugar, brown sugar, salt and vanilla until combined.
  9. Add one egg and mix again until evenly combined.
  10. Add the medium protein flour, baking soda and chocolate chips all at once.
  11. Fold with a spatula until the flour is hydrated and no dry flour is visible. Do not overmix or the gluten will develop.

  14. Weigh each dough into 15 g portions. Every cookie needs two brownie pieces and two cookie pieces, for 60 g total.
  15. Stack the four pieces alternately inside an ice cream scoop and press them together with your hand until compact.
  16. Release the dough from the scoop onto a tray and press it down slightly.
  17. Press a few extra chocolate chips on top.
  18. Sprinkle with flaky sea salt.
  19. Bake in the preheated oven for 12 to 14 minutes.
  20. As soon as they come out, round the cookies while still hot and press them lightly for a chewier centre.
