Brownie Cookie Dough Bars

  1. Preheat the oven to 180 C.
  2. Melt the unsalted butter together with the chocolate over a bain marie until both are fully melted.
  3. Take the bowl off the heat, add the brown sugar and the granulated sugar, and stir until combined. Reduce the sugar if you do not like things too sweet.
  4. Wait until the chocolate mixture is no longer hot, just warm.
  5. Add 2 eggs and whisk until the batter thickens and is evenly combined.
  6. Sift the all-purpose flour with the cocoa powder and salt into the batter in 3 to 4 additions, then add the vanilla extract.
  7. Mix with a whisk, then switch to a spatula until the batter is smooth with no lumps.
  8. Pour the brownie batter into a 20 x 20 cm pan lined with baking paper and spread it right into the corners.
  9. Bake at 180 C for about 20 minutes so the centre stays fudgy. Do not overbake it.
  10. For the cookie dough, toast the all-purpose flour in a pan, stirring constantly, until fragrant, to get rid of any bacteria. Do not go too long, you are not trying to cook the flour.
  11. Set the toasted flour aside until completely cool.
  12. Beat the unsalted butter with the brown sugar until creamy and pale.
  13. Add the vanilla extract and a pinch of salt so it is not overly sweet, then mix until combined.
  14. Add the cooled toasted flour a little at a time, sifting it in so it does not clump.
  15. Toss the chocolate chips with a little of the flour so they do not stick together or melt into the dough.
  16. Stir the chocolate chips into the cookie dough until evenly distributed.
  17. Chill the cookie dough in the fridge so the butter firms up and the dough holds its shape.
  18. Once the brownie is baked, let it cool and then chill it in the freezer until cold and firm.
  19. Take the cookie dough out of the fridge briefly so it softens slightly and is easier to spread.
  20. Spread the cookie dough over the brownie a little at a time until the whole surface is evenly covered.
  21. Lift it out of the pan, trim the edges, then cut it into about 16 pieces.
