Brownie Stuffed Chocolate Chip Cookies

  1. Melt the dark chocolate, unsalted butter and salt in the microwave, then set aside while still lukewarm.
  2. Preheat the oven to 165C and line a baking tin with paper.
  3. Whisk the eggs with the castor sugar and vanilla until pale and the sugar has dissolved, but still fluid.
  4. Pour the melted chocolate and butter into the egg mixture and stir until combined.
  5. Sift the all-purpose flour and cocoa powder into the batter and fold gently just until the flour is hydrated.
  6. Add the chopped dark chocolate, fold it in, pour into the tin, then tap the tin to knock out air bubbles.
  7. Bake the brownie for 28 to 30 minutes, then cool it and chill it until properly cold.
  8. Beat the softened butter with the brown sugar, castor sugar, salt and vanilla until creamy and half aerated.
  9. Add one egg and mix until combined.
  10. Switch to a spatula, add the all-purpose flour, baking soda and dark chocolate, and stir until it forms a dough.
  11. Cover the cookie dough with plastic and chill for about 20 minutes until firm.
  12. Cut the chilled brownie into roughly 4 x 4 cm squares for the filling.
  13. Weigh out 100 g portions of cookie dough, flatten each, set a brownie square in the middle, then wrap it up tightly and roll it round.
  14. Arrange on a tray with space between them, top with pieces of chocolate, then bake for 15 to 18 minutes in the preheated oven.
  15. Sprinkle a little maldon salt over them while hot and let them settle before moving them.
