Fried Dimsum with Mentai Sauce

  1. Blend the chicken thigh meat, the cleaned shrimp and the garlic until smooth.
  2. Add the tapioca flour, cold egg white, oyster sauce, sesame oil, salt, bouillon powder and pepper.
  3. Blend again until everything is smoothly combined.
  4. Transfer the meat mixture into a piping bag so it is easier to work with neatly.
  5. Cut the quick melt cheese into pieces.
  6. Get the spring roll wrappers ready, using two sheets doubled up so they will not split while frying.
  7. Pipe about 30 g of the meat mixture onto a wrapper.
  8. Lay a piece of cheese on top, then cover it with more of the meat mixture so the cheese is completely sealed in, about 60 g in total.
  9. Brush the edges with a glue made from flour and water, then fold and press to seal. Do not pack it too tightly or it will burst.
  10. Wrap it a second time in another wrapper and seal with the same glue.
  11. Fry the dumplings over medium low heat until cooked through and golden brown, then drain.
  12. For the mentai sauce, mix the mayonnaise, tobiko, tomato sauce, chili sauce and a little sesame oil until combined.
  13. Arrange the dumplings in aluminium foil trays, about four per tray.
  14. Spoon over a generous amount of the mentai sauce.
  15. Torch the surface until lightly charred.
  16. Sprinkle with nori and serve while still hot so the cheese is molten.
