  1. Blend the garlic, shallots, red chilies (seeds removed), galangal, ginger, turmeric, chicken powder, coriander, and salt with a little water until completely smooth.
  2. Add oil, sauté the spice paste until cooked and dry (until it releases oil).
  3. Add coconut milk and water, add the aromatics: curry leaves, lemongrass, bay leaves, and kaffir lime leaves, cook until the liquid evaporates and the paste thickens and is fully cooked.
  4. Add more coconut milk and water, then add the chicken, cook until tender, about 1 hour.
  5. Taste, adding salt and sugar if needed.
  6. Make the frying flour: mix the all-purpose flour, cornstarch, salt, pepper, garlic powder, and baking powder, stir well.
  7. Cook the gulai sauce further until it reduces and thickens more so the flavor absorbs better.
  8. Remove the chicken from the sauce so it doesn't get too wet, let the sauce cool slightly so it absorbs further into the chicken.
  9. Prepare a wet batter from flour, coconut milk, and a little water, stir well.
  10. Dip the chicken into the wet batter, then coat with the dry flour while pinching and squeezing to create a craggy, crispy texture.
  11. Fry for about 3 minutes until cooked and golden, then remove and serve.
