  3. Make the salmon filling: cook fresh salmon pieces with a little oil and salt until fully cooked (well done), then flake coarsely.
  4. Mix the cooked salmon with bottled chili sauce, mayonnaise, chicken powder, sugar, and sweetened condensed milk to make spicy mayo salmon.
  5. Make the shredded chicken filling: boil or steam thinly split chicken breast until cooked, then shred finely.
  6. Grind the spice paste: curly chilies, bird's-eye chilies, shallots, garlic, aromatic ginger (kencur), ginger, turmeric, salt, chicken powder, sugar, and a little water.
  7. Saute the ground spice paste in hot oil with kaffir lime leaves over low heat until cooked and no longer raw-tasting.
