  2. Score the flesh (not too deep), then season with salt, pepper, and lime juice to remove the fishy smell.
  3. Marinate the fish for 30 minutes.

  5. Add aromatic ginger (kencur) and ginger, chop until smooth, then set aside.

  11. Heat more oil, and fry the marinated fish until browned.
  12. Pour the pecak sambal over the fried fish.
  13. Add Thai basil and key lime, then serve.
