- Larutkan 1 saset bumbu kari Desaku ke dalam santan, aduk rata, sisihkan.
- Rajang bawang putih dan bawang merah; sobek daun jeruk; belah dan memarkan serai.
- Panaskan 6 sdm minyak goreng dengan api sedang.
- Tumis bawang putih sampai kuning, masukkan bawang merah, aduk sampai layu.
- Masukkan serai dan daun jeruk, tumis sampai harum, lalu masukkan garam.
- Masukkan kepala ikan kakap, biarkan tanpa dibalik sampai keluar aroma gurih.
- Tuang 500 ml larutan bumbu kari santan, biarkan mendidih sedikit, lalu masukkan gula pasir.
- Masukkan tomat hijau.
- Tuang sisa 500 ml santan, kecilkan api, sesekali balik ikan.
- Masukkan tomat merah, masak selama 12-15 menit sampai ikan matang, sesekali dibalik.
- Angkat serai dan daun jeruk yang sudah tidak dipakai, lalu angkat ikan dan siram dengan kuah untuk disajikan.

- Dissolve 1 packet of Desaku curry seasoning into the coconut milk, stir well, and set aside.
- Slice the garlic and shallots; tear the kaffir lime leaves; split and bruise the lemongrass.
- Heat 6 tbsp of cooking oil over medium heat.
- Sauté the garlic until golden, add the shallots, stir until softened.
- Add the lemongrass and kaffir lime leaves, sauté until fragrant, then add the salt.
- Add the snapper head, leave it without flipping until a savory aroma comes out.
- Pour in the 500 ml curry-coconut milk mixture, let it come to a light boil, then add the sugar.
- Add the green tomatoes.
- Pour in the remaining coconut milk, lower the heat, and flip the fish occasionally.
- Add the red tomato, cook for 12-15 minutes until the fish is done, flipping occasionally.
- Remove the spent lemongrass and kaffir lime leaves, then lift out the fish and ladle the sauce over it to serve.
