  3. Grind 6 shallots, 2 garlic cloves, aromatic ginger, 1 large red chilli and 7 red bird's eye chillies with a little water.
  4. Heat about 4 tablespoons of oil and fry the spice paste until cooked and fragrant.
  5. Add the crumbled oncom, then cook until it dries out evenly.
  6. Add 1 teaspoon of salt and 1 teaspoon of chicken stock powder, stir to combine, then turn off the heat.
  7. Mix the oncom into 750 g of hot rice, stirring while gently pounding it with a pestle, then scatter fried shallots over the top.
  8. For the accompaniments, grind 4 shallots, 2 garlic cloves, 2 candlenuts, ginger, turmeric, 1 teaspoon of coriander and half a teaspoon of pepper.
  9. Put the chicken in a pot with the spice paste, water, bay leaves, lemongrass, galangal, 1 teaspoon of salt and 1 teaspoon of chicken stock powder.
  10. Braise the chicken until cooked through, then lift it out and drain.
  11. Add more water to the remaining braising liquid, then braise the tempeh in it until the seasoning soaks in.
  12. Fry the chicken, tempeh and tofu one after another until cooked and golden brown.
  13. For the shrimp paste sambal, fry 15 red bird's eye chillies, 4 shallots, 1 garlic clove, the shrimp paste and half a tomato until softened.
  14. Transfer everything to a mortar, add a quarter teaspoon of salt, a little MSG and 1 teaspoon of palm sugar, then pound to a coarse paste.
  15. Serve the nasi tutug oncom with the fried chicken, fried tofu, fried tempeh, shrimp paste sambal and fresh raw vegetables.
