Balinese Klepon (Sticky Rice Balls with Palm Sugar)

  1. Cook the palm sugar and water over low heat while stirring until melted, add a little salt, stir until dissolved, then turn off the heat and strain.
  2. Mix the grated coconut with a little salt, stir well, add a pandan leaf, then steam for about 15 minutes over medium heat; set aside.
  3. Blend 8-9 pandan leaves with water until smooth, then strain twice so the pandan juice is completely clean.
  4. Add the pandan paste and a drop of orange food coloring to the pandan juice, stir well.
  5. Mix the glutinous rice flour, rice flour, and salt in a bowl until combined.
  6. Add the pandan juice gradually while stirring, then continue kneading by hand until the dough is well combined.
  7. Bring water to a boil with a little cooking oil added (so the klepon don't stick together).
  8. Take a small piece of dough, roll into a ball, elongate it slightly, then press with your finger while rotating to shape it like a bowl.
  9. Fill with the liquid palm sugar (not too full), seal, and press the edges neatly; repeat until all the dough is used.
  10. Drop the klepon into the boiling water, boil until they float, a sign they're cooked, then remove.
  11. Roll the klepon in the steamed grated coconut, then serve.
