  1. Grind the Spanish mackerel, then mix with the ice water added gradually on low speed until smooth.
  2. Add the cooking oil, mix until combined, then add the salt, MSG (optional), and sugar, and mix again until the batter thickens and binds together.
  3. Add the sago flour a little at a time while stirring with a spatula (not all at once) until combined (the batter will be somewhat soft — that's normal).
  4. Set aside about 500 g of the batter for pempek adaan, then heat water with a little oil for boiling the other pempek.
  5. For pempek kapal selam, take about 50 g of batter, coat with sago flour, shape into an oval, press a hole in the center with your thumb, fill with egg (mixed with a little salt) until half to three-quarters full, seal tightly, and boil in the boiling water.
  6. For pempek lenjer, take about 40-50 g of batter, roll and shape smooth on the work surface, then boil in the boiling water for about 15 minutes until cooked (so the egg inside the kapal selam is fully cooked too).
  7. For pempek keriting, put the remaining batter into a piping bag, pipe a free-form pattern into small oiled bowls, then boil directly in the boiling water.
  8. For pempek adaan, mix the reserved 500 g batter with the beaten egg, ground pepper, minced shallots, sliced scallion, and coconut milk, and stir until combined.
  9. Shape the adaan batter like meatballs, then deep-fry in hot oil over medium-low heat, letting them roll on their own 3-4 times before removing so they don't overcook and split.
  10. For pempek kulit, mix the ground fish skin with the ice water, stir, then add the egg and stir again, add the salt, MSG, and sugar, and stir well.
  11. Add the minced shallots, sago flour, and garlic powder, stir until combined, then shape into flat discs by pressing.
  12. Fry the pempek kulit over medium heat until just half-cooked, flipping occasionally, then drain.
  13. Fry the boiled lenjer, kapal selam, and kulit pempek before serving (the keriting can just be boiled or steamed), then serve with cuko sauce.
