  1. Cut the chicken feet into two pieces each, and cut the scallions into pieces about 1 cm long.
  2. Boil the chicken feet (200 g) with the tied celery, scallions, water (1.5 liters), salt (1 tsp), and nutmeg (1/4), over medium heat.
  3. Combine salt, sugar, and Ladaku Ground Pepper together, stir well, and set aside.
  4. Peel the gambas (oyong) until it's almost white, then cut it on a diagonal.
  5. Once boiling, lower the heat and let it simmer for 30 minutes.
  6. Slice the garlic (3 cloves).
  7. Heat cooking oil (2 tbsp), and saute the garlic until golden.
  8. Add light soy sauce (1 tbsp), and stir well.
  9. Add one ladle of stock from the chicken feet broth, and stir well.
  10. Transfer the sauteed mixture into the simmering broth, and stir well.
  11. Add the harder vegetable first — the diagonally cut carrot.
  12. Add the gambas (oyong), the soaked glass noodles, and fried shallots.
  13. Add the salt, sugar, and pepper mixture, stir until dissolved, turn off the heat, and serve.
