Braised Fried Chicken Feet with Tauco Sambal

  1. Grind the garlic, red bird's-eye chilies, curly red chilies, shrimp paste, and 1/2 tsp salt.
  2. Add 1 tsp granulated sugar and the palm sugar, grind again.
  3. Add 2 tbsp tauco.
  4. Add 3 tbsp sweet soy sauce.
  5. Add 1 tbsp hot water, mix in (the tauco sambal is done, set aside).
  6. Dissolve 1 packet of Desaku marinade seasoning with 500 ml water, stir until the salt dissolves, then add the 4 cloves of ground garlic.
  7. Add the 4 cm galangal, 3 cm ginger, and 1/2 tsp salt, stir.
  8. Add the chicken feet, stir, and make sure they're fully submerged.
  9. Cook over medium heat until it boils, lower the heat, cook for 20 minutes, then uncover and cook for another 30 minutes.
  10. Turn off the heat, let the chicken feet cool in the braising liquid until completely cool.
  11. Mix 200 g all-purpose flour with 50 g tapioca starch, 1 tsp salt, and 1 packet of Ladaku ground pepper, stir well.
  12. Take a portion of the flour mix, add 8 tbsp water to make a wet batter, and dissolve it.
  13. Heat cooking oil over medium heat, dip the chicken feet into the wet batter then the dry flour, press and squeeze, shake off the excess flour, and fry until cooked and crisp; serve with the tauco sambal.
