  1. Cook 600 ml coconut milk with 2 pandan leaves and salt, stirring until it boils.
  2. Pour the coconut milk into a bowl and keep stirring until it is completely cold, then set it aside.
  3. Combine 50 ml warm water with the instant yeast and 1 tbsp granulated sugar, stir until even, cover and rest 5 minutes until the yeast foams.
  4. In another bowl put 3 eggs and the granulated sugar, then beat for 5 minutes on the lowest speed until the sugar dissolves.
  5. Add the baking powder and 1/2 kg low-protein flour gradually.
  6. Pour in the cold coconut milk gradually alongside the flour, stir it slowly first, then beat on low speed until even.
  7. Add the melted margarine, the sweetened condensed milk and the vanilla paste, then add the activated yeast.
  8. Beat again briefly on low speed, then whisk by hand to make sure everything is evenly combined.
  9. Cover the batter with a cloth and rest it for 60 minutes until it rises.
  10. After 60 minutes uncover it and whisk it so the air trapped in the batter escapes.
  11. Divide the batter in two and add pandan paste to one half.
  12. Turn the heat to the lowest setting, heat the pukis mould pan for 5 minutes, then brush the moulds with margarine.
  13. Fill each mould two thirds full and bake over the lowest heat for 13 minutes until the surface is dry.
  14. Once they are done, lift the cakes out of the moulds.
  15. Bake the pandan batter the same way for 13 minutes, then lift those cakes out.
