Purple and Yellow Steamed Layer Cake

  1. Put 1400 ml coconut milk plus 2 pandan leaves into a wok.
  2. Set the heat to medium, add 1/2 teaspoon salt, then stir until it boils, at which point turn off the heat.
  3. Pour it into a bowl, take out the pandan leaves, then stir until cool.
  4. In another bowl combine 175 grams tapioca starch, 400 grams granulated sugar, 350 grams rice flour, plus 1/2 teaspoon vanilla paste, then mix until evenly blended.
  5. Pour the cooled coconut milk in a little at a time while mixing, then pour in the rest, mixing until the sugar dissolves.
  6. Divide the batter into 4 parts.
  7. Add 5 drops of purple to the first part for dark purple with 2 drops to the second for light purple, then stir each until evenly colored.
  8. Add 5 drops of yellow to the third part for dark yellow with 2 drops to the last part, then stir them through.
  9. Set out a tin 20 cm wide and 7 cm tall, pour in a little cooking oil, then brush it evenly inside.
  10. Put the tin into the preheated steamer.
  11. Stir the batter, ladle 3 scoops of the dark yellow into the tin, then steam for 5 minutes over medium heat.
  12. After 5 minutes open the steamer, ladle in 3 more scoops of the dark yellow, then steam for 5 minutes.
  13. After 5 minutes ladle in 3 scoops of the light yellow, then steam for 5 minutes.
  14. Ladle in 3 scoops of the dark purple, repeating with the remaining colors, steaming each layer for 5 minutes.
  15. Once all the batter is in, steam for 30 minutes over medium heat.
  16. After 30 minutes test with a skewer. If nothing sticks, turn off the heat, taking the tin out.
  17. Let it cool completely, turn the cake out of the tin, then slice it with a plastic-wrapped knife.
