Coconut Pandan Steamed Layer Cake

  1. Pour 1500 ml of coconut milk into a wok.
  2. Add 1 tsp of pandan paste, or another flavor paste if you prefer.
  3. Add 375 grams of granulated sugar, about 25 tbsp.
  4. Cook over medium heat while stirring until smooth and boiling.
  5. Once it boils, turn off the heat and take the wok off the stove.
  6. Pour the coconut mixture into a bowl.
  7. Stir it until the mixture is cool.
  8. In another bowl, combine 500 grams of tapioca starch, 50 grams of all-purpose flour, 100 grams of rice flour, 1 tsp of salt, and 1/4 tsp of vanilla powder.
  9. Mix all the dry ingredients until evenly combined.
  10. Pour the coconut mixture into the dry ingredients in stages, whisking until fully smooth.
  11. For mixture B, combine 50 grams of all-purpose flour, 120 ml of coconut milk, and 1/2 tsp of salt, whisking until even.
  12. Prepare a pan, add a little cooking oil, then brush it evenly over the inside.
  13. Place the pan in the steamer that was preheated earlier.
  14. Stir the batter before pouring, then ladle three scoops into the pan.
  15. Cover the steamer, then steam for just 5 minutes.
  16. Ladle in another three scoops, then steam for 5 minutes more.
  17. Next pour in the white mixture, then steam for 5 minutes.
  18. Keep alternating the batters, steaming each layer for 5 minutes until they are used up.
  19. Pour in all the remaining batter, steaming this final layer for 25 minutes.
  20. Once cooked, turn off the heat, then take the pan out of the steamer.
  21. Turn the cake out of the pan only after it has cooled completely.
  22. Slice it with a plastic-wrapped knife so it does not stick, then serve.
