Steps

  1. Put 775 grams of butter into a bowl.
  2. Add 500 grams of powdered sugar, about two packets.
  3. Mix for about 3 minutes, just until combined, no longer, so the dough does not spread.
  4. Blend 12 egg yolks into the mixture.
  5. Add 20 grams of milk powder plus 1/2 tsp of vanilla powder.
  6. Mix until evenly combined, only as long as it takes.
  7. Add half of the 1 kg of low-protein flour, then mix until evenly combined.
  8. Add the rest of the flour, then keep mixing until the dough comes together.
  9. Carry on mixing by hand so it combines more easily.
  10. Load the dough into a piping bag fitted with a cookie nozzle.
  11. Get a steamer tray ready, then lay baking paper on it.
  12. Pipe the dough onto the baking paper.
  13. Top the cookies with a few chocolate chips.
  14. Set a wok or a non-stick pan on the stove, then turn the flame to its lowest.
  15. Heat the pan for about 5 minutes over that low flame.
  16. Set the tray of cookies inside the heated pan.
  17. Cover and bake for 35 to 40 minutes over the lowest flame.
  18. After 40 minutes, once the cookies are done, lift them out of the pan.
  19. Color the remaining dough, load it into a piping bag, then pipe it onto the baking paper.
  20. Bake again for 35 to 40 minutes over the lowest flame, repeating until the dough runs out.
  21. Bake whatever dough is left in the oven instead.
  22. Preheat the oven for 10 minutes at 150 degrees Celsius.
  23. Once preheated, put the cookies into the oven.
  24. Bake for 25 minutes at 140 degrees Celsius with top and bottom heat.
  25. After 15 minutes of baking, swap the upper tray with the lower one so they do not scorch, then bake for 10 minutes more.
  26. Once baked, take the cookies out of the oven and serve.
