Steamed Bakpao Buns with Jicama Filling

Steps

  1. Heat enough vegetable oil in a wok, saute 3 diced shiitake mushrooms until fragrant and browned, then set them aside in a bowl.
  2. In the same wok, heat a little more oil and fry 3 cloves of chopped garlic until golden brown, then set it aside with the mushrooms.
  3. Heat a little more oil in the same wok and saute 2 tbsp chopped dried shrimp until fragrant.
  4. Add 500 g jicama cut into small cubes and stir briefly until combined.
  5. Add 1.5 tsp salt, 1/2 tsp pepper, 1/2 tsp mushroom bouillon, 2 tbsp sugar, 1 tbsp light soy sauce, plus the fried mushrooms and garlic.
  6. Cook until the jicama is wilted enough and the seasoning has soaked in.
  7. Add 2 chopped stalks of celery and 1 stalk of spring onion, stir briefly then take it off the heat.
  8. Transfer the jicama filling into a bowl fitted with a strainer so the liquid drains and the filling is not wet when you wrap it.
  9. Prepare a wok and heat enough vegetable oil, add 250 g minced chicken and stir until it changes color.
  10. Add 1/3 tsp salt, 1/2 tsp pepper, 1/3 tsp mushroom bouillon, 1/2 tsp five spice powder and 2 tbsp light soy sauce, then stir until combined.
  11. Add 100 ml water then cook again until it boils and the liquid reduces.
  12. Pour in 1/2 tbsp cornstarch dissolved in a little water, then stir until combined.
  13. Once it is dry enough, take it off the heat and transfer it to a bowl, then let it cool first.
  14. Prepare a wide bowl, add 175 g cake flour, 325 g bao flour, 9 g instant yeast, 1/2 tsp double acting baking powder and 100 g sugar, then stir until evenly combined.
  15. Pour in 150 g milk slowly while stirring, then add 150 g ice cold water while continuing to stir.
  16. Knead by hand until the dough comes together, then move it onto a silicone mat and keep kneading until it is half smooth.
  17. Once the dough is half smooth, add 40 g shortening and 2 g salt.
  18. Knead again for roughly 20 to 25 minutes until the dough is smooth, glossy and no longer sticks to your hands, then shape it into a ball.
  19. Divide the dough into 40 g pieces and roll them all into balls.
  20. Cover with plastic wrap or a clean cloth and rest for 10 minutes.
  21. After 10 minutes take one ball of dough, roll it out thin, then fill it with the jicama filling, the ngohiong chicken and a soy braised egg.
  22. Shape the buns however you like, then cover them with a clean cloth so the skins do not dry out.
  23. Once the buns have puffed up slightly after about 10 minutes, bring the steamer water to a boil and add a few pandan leaves for extra aroma.
  24. Steam the buns for 10 minutes over high heat, in the order they were shaped.
