Steps

  1. Put 150 g wheat flour, 75 ml water, 1/2 tsp salt, and 15 ml cooking oil into a bowl, then stir until evenly combined.
  2. Carry on kneading by hand until the dough is smooth, then shape it into a ball.
  3. Divide the dough into two equal portions of about 120 g each, then round each one.
  4. Put the dough into a container, pour in cooking oil until it is completely submerged, then cover and leave for at least 1 hour.
  5. Heat 1 tbsp margarine in a wok, then add 3 grated cloves of garlic and 1 onion cut into small pieces.
  6. Fry over medium heat, stirring now and then, until the aromatics smell fragrant.
  7. Add 200 g chicken cut into small pieces, then cook until the meat changes color.
  8. Add 1/2 tsp ground pepper, 1/2 tsp stock powder, 1/2 tsp salt, 1/2 tsp granulated sugar, and 1 tsp curry powder, then stir until evenly combined.
  9. Carry on cooking until the chicken is done and the seasoning has soaked in, then turn off the heat.
  10. Divide the cooked chicken into two equal parts, then add each to a bowl holding half of the 4 beaten eggs.
  11. Divide 3 finely sliced spring onions between the two bowls, then stir until evenly combined.
  12. After the dough has rested for an hour, roll it out thin to about 30 cm across.
  13. Heat a little oil in a 22 cm frying pan over the lowest heat, then lay the rolled-out dough in it.
  14. Pour the egg filling onto the wrapper, then fold the dough into an envelope so the filling is enclosed.
  15. Cook over low heat until golden brown, spooning oil over the surface so it cooks evenly.
  16. Once the underside is golden brown, flip it over so it cooks evenly.
  17. Stand it on each edge in turn so the sides cook through as well.
  18. Once it is golden brown, lift the martabak out of the pan, then cook the second one.
  19. Cut the martabak into pieces as you like and serve.
