Ingredients

Steps

  1. Grind or chop the shallots and garlic in a chopper or blender.
  2. Grind the chicken.
  3. Heat a little oil in a pan, then fry the chopped shallots and garlic until fragrant.
  4. Add the ground chicken, then cook while stirring until the meat changes colour, then turn off the heat.
  5. Transfer the cooked chicken to a bowl.
  6. Add the finely sliced spring onion, the lightly beaten eggs, salt, ground pepper, and stock powder, then stir until evenly combined.
  7. If you plan to freeze them, cook the mixture again over medium heat, stirring and scrambling until the egg is cooked and dry so it keeps longer.
  8. Turn off the heat, transfer the filling to another container, then leave it to cool.
  9. Dissolve the wheat flour in water to use as the glue; you may also use egg white.
  10. Take one spring roll wrapper, then spoon about two tablespoons of filling into the centre.
  11. Fold the wrapper into the middle, brush the end with the glue, fold it in again, then turn it over.
  12. Brush both ends with the glue, then fold them into the middle to form an envelope; repeat until all the filling is wrapped.
  13. To freeze them, line a container with plastic, arrange the parcels with space between them so they do not stick, cover with another sheet of plastic, close the container, then put it in the freezer.
  14. Heat oil in a pan over medium heat, then add a few parcels at a time so they do not stick together.
  15. Fry until golden, then turn them so they colour evenly.
  16. Once both sides are golden, lift them out and drain off the oil, then serve while warm.
