Steps

Steps were generated from the video narration. Watch the video if unsure.

  1. Cut 500 g of pork shoulder into small pieces, and cutting works better than mincing here.
  2. For the seasoning, prepare 3 finely chopped cloves of garlic and 3 tbsp hoisin sauce.
  3. Add 3 tsp of finely ground red yeast rice.
  4. Add 1/2 tsp five spice powder and 1 tbsp sesame oil.
  5. Add 1 tbsp cooking wine or Shaoxing wine.
  6. Add 1 tsp mushroom stock powder, which is optional, 1/2 tsp ground white pepper, 2/3 tsp salt, and 2 tbsp sugar, then mix until even.
  7. Marinate the meat for about 1 hour, or overnight in the fridge.
  8. Heat a wok, then add 1 tbsp vegetable oil.
  9. Add the marinated meat and stir fry it.
  10. Add 300 ml of water.
  11. Cover the wok, then cook until the sauce thickens.
  12. Once it starts to thicken, add a mixture of 1 1/2 tsp cornstarch with 2 tbsp water.
  13. Cook again until the liquid reduces further so the filling is moist but not watery.
  14. Turn off the heat and cool the filling to room temperature, and do not fill the buns while it is still hot.
  15. For the dough, prepare 500 g of low protein flour or cake flour.
  16. Add 8 g of instant yeast, which does not need to be bloomed in warm water.
  17. Add 80 g sugar and 2 tsp double acting baking powder.
  18. Add 1/2 tsp salt.
  19. Mix all the dry ingredients first so they are evenly combined.
  20. Add 230 to 240 ml of room temperature water a little at a time rather than all at once, so the dough does not go lumpy.
  21. Wash your hands, then knead the dough until the sugar has dissolved.
  22. Rest the dough for about 10 minutes so it becomes softer.
  23. Add 80 g of shortening.
  24. Knead again until the surface of the dough is smooth, about 10 minutes with a mixer or about 30 minutes by hand.
  25. Shape the dough into a long log.
  26. Divide the dough into 13 to 14 portions and weigh them so they come out the same size.
  27. Take one portion, knead it briefly so the surface is smooth, then shape it into a small ball.
  28. Cover the dough with plastic or a cloth so it does not dry out.
  29. Take the first ball you shaped and flatten it with your hand, smooth side down, making the centre slightly thicker than the edges.
  30. Add about 1 tbsp of the filling.
  31. Seal it tightly so the filling cannot escape, and shape it however you like.
  32. Put each bun on a piece of baking paper so it does not stick to the base of the steamer.
  33. Cover them and let them rise to double in size for about 30 minutes.
  34. Set up a steamer with boiling water, and make sure the water does not touch the buns.
  35. Steam for about 15 minutes over medium heat, then turn off the heat.
  36. Serve them hot, or if you want to store them let them cool first, then put them in a container and keep them in the fridge or the freezer.
