Putu Songkok, Pontianak Sticky Rice with Coconut and Palm Sugar

Ingredients

Steps

  1. Put 200 g palm sugar, 50 g granulated sugar, 1/3 tsp salt, 3 pandan leaves and 60 ml water in a saucepan.
  2. Turn the heat to medium low and cook while stirring constantly so the bottom does not scorch.
  3. Once it boils and the sugar has dissolved, turn off the heat, take it off the stove and strain it.
  4. Set the palm sugar syrup aside to cool.
  5. Put 300 g grated coconut into a pan.
  6. Toast over low heat, stirring constantly, until dry and golden brown.
  7. Turn off the heat, take it out and let it cool.
  8. Blend the toasted coconut until fine.
  9. Wash 500 g white glutinous rice, soak it for about 1 hour, then drain.
  10. Put the glutinous rice into a pan.
  11. Add 1 tsp salt and 3 pandan leaves, then pour in 600 ml boiling hot water.
  12. Turn the heat to medium and stir constantly until the rice has absorbed all the water.
  13. Turn off the heat, then move the rice to a steamer lined with banana leaf over already boiling water.
  14. Steam for 30 minutes or until cooked through.
  15. Transfer the sticky rice to a wide dish and let it cool before shaping.
  16. Cut open a plastic bag so it lies flat, then brush the surface with cooking oil.
  17. Take a portion of the sticky rice and place it on the plastic.
  18. Fold the plastic over while pressing the rice into a compact slab.
  19. Roll both ends of the plastic while twisting so the rice packs even tighter.
  20. Once it is compact, unwrap the plastic.
  21. Cut the sticky rice with a plastic spatula brushed with a little oil so it does not stick.
  22. Alternatively, shape the rice by packing it into a ring cutter.
  23. Scatter the ground toasted coconut over the sticky rice.
  24. Pour over plenty of palm sugar syrup and serve.
