Steamed Taro Balls with Dried Shrimp Topping

  1. Heat enough oil, then fry 50 g of chopped sweet radish until golden brown.
  2. Drain the sweet radish and keep the oil to reuse.
  3. Pour the oil back into the pan, then add 5 cloves of chopped garlic and 150 g dried shrimp.
  4. Fry until the garlic and dried shrimp are golden brown.
  5. Take out 4 tbsp of the shrimp and garlic mixture for the dough, then turn off the heat.
  6. Add the fried sweet radish to the rest of the mixture and stir well.
  7. Add 1/2 tbsp dark or sweet soy sauce to taste, then stir until evenly combined.
  8. Take the topping out into a clean bowl and set it aside.
  9. Peel the taro with a sharp knife, then cut off the stem end.
  10. Weigh the peeled taro, you need about 600 g.
  11. Grate the taro on the smaller holes of the grater; cut it in half first if the root is large.
  12. Add 1/2 tsp mushroom stock powder, 1/2 tsp pepper, 1 tsp salt and 1.5 tbsp sugar to the grated taro.
  13. Add 80 g toasted peanuts, roughly chopped.
  14. Add 1 stalk of spring onion and 2 stalks of celery leaves, finely sliced.
  15. Add 50 g tapioca starch.
  16. Add the 4 tbsp of reserved shrimp and garlic mixture.
  17. Mix everything until evenly combined.
  18. Take a portion of the mixture and roll it into a ball; just roll it, no need to press hard.
  19. Continue until all the mixture is shaped, giving about 15 pieces.
  20. Steam over medium high heat for 20 minutes with the water already boiling.
  21. Once cooked, let them cool until they are no longer hot, so the texture firms up instead of staying soft.
  22. Top with the dried shrimp mixture, spoon over some sambal, and serve.
