Sweet and Sour Peanut and Anchovy Crunch

  1. Soak 20 g tamarind in 50 ml water and work it with your fingers to release the pulp; do not add more water or the sauce turns runny.
  2. Thinly slice 8 shallots and 2 cloves of garlic.
  3. Set a pan on the stove and heat enough frying oil.
  4. Add 300 g peanuts, even before the oil is hot, then fry over low heat so they do not scorch.
  5. Once they turn lightly golden, lift them out and drain straight away; they burn quickly.
  6. In the same oil, fry 200 g anchovies until dry and crisp.
  7. While there is still a lot of bubbling the anchovies are still wet; take them out once the bubbling dies down.
  8. In a cleaned pan, heat enough oil and fry the shallots and garlic over low heat until golden brown.
  9. Lift and drain them, then add them to the peanuts and anchovies.
  10. Pour the oil out of the pan, then squeeze the tamarind juice straight into it.
  11. Add 80 g sugar, 1 tbsp sweet soy sauce and 3 kaffir lime leaves crushed in your hand.
  12. Turn the heat to low and stir until the sugar dissolves and the sauce thickens.
  13. Test it by dragging the spatula through; if the sauce closes back slowly it is thick enough.
  14. Turn off the heat, then immediately add the peanuts, anchovies and fried shallots, and toss quickly until evenly coated.
  15. Wait until it is no longer hot, then store it in an airtight container so it stays crisp.
