Banana Cheesecake with Crumb Topping

Steps

  1. For the crumbs, sift 50 g cake flour, then add 10 g powdered sugar and 25 g cold butter.
  2. Cut the butter in with a scraper until it is evenly mixed into the dry ingredients and looks like sand.
  3. Put 250 g of room temperature cream cheese into a mixing bowl, add 50 g powdered sugar, then whisk until the cream cheese is smooth.
  4. Add one egg then whisk again until evenly combined.
  5. Finally add 1 tbsp cornstarch then whisk again until the batter is smooth and silky.
  6. Prepare a pan greased with butter and lined with baking paper.
  7. Weigh out 250 g of overripe raja bananas.
  8. Mash the bananas with a fork by pressing them down.
  9. In a mixing bowl add 100 g butter, 50 g margarine, 80 g palm sugar and 50 g granulated sugar, then stir until combined.
  10. Beat with a whisk or a mixer until pale and light.
  11. Add 3 eggs and half a teaspoon of vanilla extract then beat until evenly combined.
  12. Sift together all the dry ingredients, that is 225 g all purpose flour, 25 g cornstarch, 1.5 tsp baking powder, 1/4 tsp baking soda and 1/3 tsp ground cinnamon, then mix until combined.
  13. Add the mashed banana then stir until evenly combined.
  14. Pour half of the batter into the pan and level it.
  15. Pour the cream cheese batter on top and spread it gently without mixing it into the cake batter.
  16. Pour the rest of the cake batter over the cream cheese layer and level it again.
  17. Drag a chopstick down through the batter just to marble the cream cheese a little, without overdoing it.
  18. Sprinkle over the crumbs prepared at the start.
  19. Bake at the temperature shown in the video.
  20. Test doneness by pushing a skewer into the centre of the cake all the way down; if no batter clings to it the cake is done.
  21. Turn the cake out of the pan while it is still hot.
