Tokyo Banana Sponge Rolls with Banana Custard

  1. Mash one ripe banana with a fork until smooth.
  2. Add the egg yolk, granulated sugar, cornstarch, vanilla and salt to the mashed banana and stir until combined.
  3. Pour in the banana milk, stir until smooth, then strain it into a saucepan.
  4. Turn on low heat and cook, stirring constantly, until the custard thickens and starts to pop like a pastry cream.
  5. Pour the custard onto a plate and cover the surface with plastic wrap pressed directly onto it, then let it cool.
  6. Prepare a 20 x 30 cm pan brushed thinly with butter and lined with baking paper, then preheat the oven to 170 C.
  7. Separate the egg yolks from the whites. Make sure the bowl for the whites is spotless and free of any yolk.
  8. Mix the vegetable oil with the liquid milk in a separate bowl and set it aside.
  9. Whip the egg whites until they start to build volume, then add the granulated sugar gradually and whip to stiff peaks.
  10. Add the egg yolks, salt and vanilla to the meringue and mix until combined.
  11. Add the cake flour, cornstarch and a little baking powder, folding them in carefully.
  12. Take about a quarter of the batter and stir it into the oil and milk mixture to bring the textures together.
  13. Pour that mixture back into the batter and fold only briefly. The batter should stay thick.
  14. Pour the batter into the pan and level it with a scraper so it reaches every corner.
  15. Tap the pan to release the air, then bake for only about 12 minutes. Do not let it dry out or the sponge will crack when rolled.
  16. Run a knife around the sides of the pan and turn the sponge out carefully.
  17. Cover the sponge with paper while it cools so it does not dry out.
  18. Trim off the top skin of the sponge and neaten the drier edges.
  19. Cut the sponge into 2 by 3 pieces to get six sheets.
  20. Loosen the cooled banana custard and transfer it into a piping bag.
  21. Lay a sheet of sponge on plastic wrap with the smooth side facing out, then pipe custard down the middle.
  22. Roll the sponge up, tighten it with the plastic, press the sides in and twist both ends like a wrapped sweet.
  23. Chill for at least 1 hour until the shape sets before unwrapping.
