Brown Butter Banana Cake with Salted Caramel

  1. Warm the cream in the microwave until lukewarm so the caramel does not seize later.
  2. Cook the granulated sugar in a pan until it turns to caramel, then turn off the heat.
  3. Slowly pour the warm cream into the caramel while stirring until smooth.
  4. Add the butter and salt, stir until combined, then leave it to cool completely with a cover pressed to the surface.
  5. Cook the unsalted butter in a pan, stirring occasionally, until the milk solids turn brown, then pour it out immediately and let it cool.
  6. Preheat the oven to 170 to 180C and prepare a 23 x 23 cm tin.
  7. Weigh out the very ripe bananas and mash them with a fork until they turn to a puree.
  8. Mix the mashed banana with the egg, brown sugar, castor sugar and vanilla until combined.
  9. Add the yoghurt, the cooled brown butter and the vegetable oil, and stir until smooth and lump free.
  10. Sift the all-purpose flour, baking soda, baking powder, cinnamon and salt into the batter.
  11. Stir only until the flour is hydrated and the batter is smooth; overmixing will make the cake tough.
  12. Line the base of the tin with baking paper and brush the sides with a thin layer of butter, then pour in the batter and level it.
  13. Bake for 30 to 40 minutes until cooked through and golden brown, then turn it out onto a cooling rack.
  14. Beat the room-temperature cream cheese and unsalted butter with the sifted powdered sugar and vanilla until smooth.
  15. Add two tablespoons of milk and mix until the frosting is lighter in texture.
  16. Spread a thick layer of frosting over the cooled cake and swirl it as you level it out.
  17. Drizzle the salted caramel over the frosting and marble it with a spatula before slicing.
