Caramel Latte Cake

  1. Pull 2 shots of espresso, about 30 ml, and let it cool completely.
  2. Put 180 g of unsalted butter in the mixer bowl.
  3. Preheat the oven to 170C.
  4. Add 2 pinches of salt and 1/2 tsp of vanilla extract.
  5. Add 70 g of icing sugar and 75 g of brown sugar.
  6. Beat until pale, light, and the texture of buttercream.
  7. Add 3 eggs one at a time, leaving a minute between each.
  8. Add 1 egg yolk last and beat until combined.
  9. Add half of the 180 g of cake flour, 1/2 tsp of baking soda, and 3/4 tsp of baking powder.
  10. Pour in half of the cooled espresso.
  11. Mix on low speed until combined.
  12. Add the remaining flour and the rest of the espresso.
  13. Mix just until combined; overmixing will make the cake tough.
  14. Prepare three 16 cm round tins, buttered and lined with paper.
  15. Weigh the batter and divide it evenly between the three tins.
  16. Level the surface of each with a spatula.
  17. Tap the tins so the air escapes.
  18. Bake in the preheated oven for 25 to 30 minutes until done.
  19. Cook 100 g of sugar over low heat to make the caramel.
  20. Cook until all the sugar has dissolved and the colour turns caramel brown.
  21. Turn the heat right down and pour in 100 g of warm whipping cream a little at a time while stirring.
  22. Keep stirring until there are no hard lumps of caramel left.
  23. Add 25 g of unsalted butter.
  24. Add 1/8 tsp of salt, or more to taste.
  25. Transfer the caramel to a container and let it cool and thicken.
  26. Leave the italian meringue buttercream at room temperature for 15 minutes, then beat it back to a workable texture.
  27. Add the espresso in 3 to 4 additions, mixing until the colour is even.
  28. Trim off any overly caramelised crust from the cake layers.
  29. Spread about 60 g of buttercream over the first cake layer and level it.
  30. Drizzle chilled salted caramel over the centre.
  31. Stack the next cake layer and spread another 60 g of buttercream.
  32. Cover the whole cake with a thin layer of buttercream as a crumb coat.
  33. Chill the cake until the buttercream sets.
  34. Coat the cake a second time with the same buttercream.
  35. Draw a scraper slowly around the sides until they are smooth.
  36. Finish the top with a spatula held at 45 degrees.
  37. Put the remaining buttercream into a piping bag with a tip of your choice.
  38. Pipe a decoration on top of the cake.
  39. Pour salted caramel into the centre of the top.
  40. Tilt the cake gently so the caramel spreads evenly.
  41. Press cookie crumbs around the sides of the cake.
