Ingredients

SIMPLE SYRUP:

Steps

  1. Preheat the oven to 170 degrees and prepare three 18 cm round tins lined with baking paper.
  2. Beat 180 g unsalted butter with 180 g granulated sugar, 85 g brown sugar and 2 pinches of salt until fluffy, pale and light.
  3. Add 1/2 tsp vanilla extract and beat briefly.
  4. Add the eggs a little at a time while beating until the batter is evenly combined and smooth.
  5. Sift 270 g all-purpose flour together with 2 tbsp cocoa powder, 1/2 tsp baking powder and 1/4 tsp baking soda.
  6. Add half the dry ingredients and half of the 135 g yoghurt, then mix on low speed until just combined.
  7. Add the remaining dry ingredients and the rest of the yoghurt, and mix again on low speed until combined.
  8. Pour in 2 tbsp oil and 2-3 tsp red food colouring, then mix on the lowest speed until the colour is evenly red.
  9. Divide the batter evenly between the three tins and smooth the surface right out to the edges.
  10. Bake in the preheated 170 degree oven for about 30 minutes.
  11. Turn the cakes out, peel off the paper, then cool on a rack until completely cold.
  12. For the simple syrup, dissolve 10 g granulated sugar in 100 ml hot water, stirring until the sugar dissolves.
  13. Trim the domed tops off the cakes and keep the trimmings for decoration.
  14. For the frosting, beat 200 g unsalted butter with 1/2 tsp vanilla extract until fluffy and pale.
  15. Add 150 g sifted icing sugar, fold gently first, then beat until white, pale and light.
  16. Separately beat 190 g cream cheese on low speed until smooth and free of lumps.
  17. Combine the cream cheese into the buttercream on low speed until evenly mixed.
  18. Place the first cake layer down and brush the surface with simple syrup using a brush or spoon.
  19. Spread cream cheese frosting on top and smooth it out with a spatula.
  20. Stack the next layer and repeat the syrup and frosting until the last layer is on.
  21. Cover the sides and top of the cake with frosting, then smooth it neatly with a scraper.
  22. Chill the cake for 20 to 30 minutes until the frosting sets.
  23. Coat the cake again with the remaining cream cheese frosting, smooth it with the scraper, then make line patterns down the sides.
  24. Briefly bake the reserved cake trimmings until dry, crush them into crumbs, then scatter them over the cake.
