Ingredients

Cream Cheese:

Steps

  1. Put 65 g of white chocolate and 150 ml of cooking oil into a bowl.
  2. Melt it over a pot of boiling water until the chocolate has melted and combined, turn off the heat, then set it aside.
  3. Put 5 eggs, 175 g of granulated sugar, and 1 teaspoon of emulsifier into a bowl.
  4. Beat on maximum speed for about 10 minutes until the batter is risen, thick, and holds a trail.
  5. Sift in 125 g of wheat flour, 30 g of milk powder, 1 and a quarter teaspoons of cocoa powder, and half a teaspoon of baking powder.
  6. Stir it in by hand first so the flour does not fly about, then mix on the lowest speed for about 30 seconds, just enough to combine.
  7. Go over the batter with a spatula to make sure it is evenly combined.
  8. Add 1 teaspoon of vanilla, 1 tablespoon of red velvet paste, and the melted oil and chocolate mixture.
  9. Fold gently from the bottom up until evenly combined with no liquid settled at the bottom.
  10. Pour the batter into 13 cm moulds greased thinly with cooking oil, not too full since the batter will rise a little.
  11. Tap the moulds a few times so trapped air escapes, then level the batter with a skewer so the cake has a fine crumb.
  12. Put the moulds into a steamer that is already boiling, then steam for about 20 minutes over medium heat until the cakes are done.
  13. Do a skewer test, lift the cakes out of the steamer, then carry on steaming the rest of the batter.
  14. Put 175 g of spreadable cheese, 40 g of sweetened condensed milk, 40 ml of liquid milk, and 50 ml of liquid whipping cream into the chopper, then blend until smooth and evenly combined.
  15. Once the cakes are just warm, turn them out of the moulds.
  16. Pipe cream cheese over the top to taste, then decorate with cake crumbs.
