Ingredients

Frosting Ingredients:

Steps

  1. Put 140 g wheat flour, 1/2 tsp baking powder, 1/2 tsp baking soda, and 1 tbsp cocoa powder into a bowl, then sift them.
  2. Add 120 g granulated sugar and 1/4 tsp salt, then stir until evenly combined.
  3. Add 1 egg, 125 ml cooking oil, 125 ml liquid milk, and 1 tsp vanilla paste, then stir until evenly combined.
  4. Add 1/2 tbsp red velvet paste or red food coloring, then stir again until evenly combined and set aside.
  5. Steep 1/4 tsp coffee in 60 ml hot water and stir until dissolved.
  6. While still hot, pour the coffee into the batter, then stir until evenly combined.
  7. Add 1 tbsp lemon juice, then stir again until evenly combined.
  8. Pour the batter into medium paper cups supported by pie moulds, not filling them to the top since the batter rises while steaming.
  9. Steam for about 25 minutes on medium heat over already boiling water, with the steamer lid wrapped in a clean cloth.
  10. Open the steamer lid and do a skewer test, and if no batter clings to it lift the cupcakes out.
  11. While still hot, take the cupcakes out of the moulds, then let them cool.
  12. Put 125 g cream cheese, 50 g margarine, and 1 tbsp sweetened condensed milk into a bowl, then stir until evenly combined and smooth, then set aside.
  13. Beat 150 ml cold liquid whipping cream at maximum speed for about 5 minutes until it whips up thick and creamy.
  14. Add 1/2 tsp vanilla to the cream cheese mixture, then beat for about 1 minute so it becomes even smoother.
  15. Pour the cream cheese mixture into the whipped cream, then beat until evenly combined.
  16. Transfer the frosting into a piping bag, then pipe it onto the cooled cupcakes as you like.
