Steps

Steps were generated from the video narration. Watch the video if unsure.

  1. Preheat the oven to 170 degrees and line a 20x20 cm pan with baking paper, making the sides tall.
  2. Sift the cocoa powder over the unsalted butter, add the salt, then melt it all in the microwave and let it cool.
  3. Whisk the eggs with the vanilla and granulated sugar only until the sugar dissolves, not until fluffy.
  4. Pour in the cooled chocolate and butter mixture and stir until combined.
  5. Sift the all purpose flour into the batter and fold quickly with a spatula just until combined.
  6. Pour the batter into the pan, tap it to release the air, then bake for 20 to 25 minutes.
  7. Leave the brownie in the pan and let it cool completely.
  8. Cook the granulated sugar in a large pot, swirling occasionally, until it melts and turns amber.
  9. Pour in the warmed whipping cream slowly with the heat still on, then stir into a caramel sauce.
  10. Add the salt, vanilla, and butter, then cook over very low heat while stirring so the fat does not split.
  11. Keep cooking and check with a thermometer until the caramel reaches 118 to 120 degrees, then turn off the heat.
  12. Add the plain cornflakes and stir until every piece is evenly coated in caramel.
  13. Pour the caramel cornflakes over the cooled brownie and press them down until compact and level.
  14. Let it sit for about 1 hour until the caramel sets, then lift it out of the pan.
  15. Cut it into 16 pieces using a serrated bread knife.
