Pandan Rice Layer Cake with Neat Layers

  1. Cook 750 ml of medium thick coconut milk from one coconut together with 185 g sugar, 1/4 tsp salt, 1/2 tsp vanilla powder and 3 pandan leaves.
  2. Cook over low heat while stirring until the sugar dissolves and the coconut milk is hot, but do not let it boil so it does not split.
  3. Turn off the heat then let it cool to warm or cold, leaving the pandan leaves soaking so the aroma develops further.
  4. Brush the base and sides of the pan with vegetable oil then set it aside.
  5. Bring the steamer water to a boil and add torn pandan leaves so the cake is more fragrant.
  6. Combine 170 g rice flour with 80 g tapioca starch.
  7. Pour in half of the coconut milk once it is at room temperature, stirring until there are no lumps of flour.
  8. Pour in the rest of the coconut milk then stir again until evenly combined.
  9. Weigh the whole batter then divide it into two equal portions.
  10. For the green batter add 2 tbsp pandan juice sediment, and add about 10 g of batter to the white portion so both end up the same volume.
  11. Weigh out roughly 80 to 82 g of batter per layer, always stirring the batter before weighing since the flour settles.
  12. Once the steamer water boils lower the heat, put the pan in, then pour the first layer using the white batter.
  13. Cover and steam for 4 minutes, and while waiting weigh out the batter for the next layer.
  14. After 2 minutes of steaming open the lid and wipe it dry quickly so condensation does not drip onto the cake, then cover again.
  15. After 4 minutes pour the second layer with the green batter, cover, and steam for another 4 minutes.
  16. Do the same for every layer and do not overcook them, or the layers will separate once cooked.
  17. For the last layer steam for 20 minutes.
  18. Wait until it reaches room temperature or is no longer too hot, then turn it out of the pan and slice.
