Ingredients

Steps

  1. Prepare a pan, add 425 g of granulated sugar, 1/4 tsp of vanilla powder, and 950 ml of medium-thick coconut milk, then stir until evenly combined.
  2. Cook over medium heat while stirring constantly until the sugar dissolves so the coconut milk does not split.
  3. Once the sugar has dissolved, turn off the heat and let it cool down, or at least until lukewarm.
  4. For the pandan juice, cut up 10 pandan leaves and put them into a chopper.
  5. Add 250 ml of water, then blend until smooth.
  6. Strain the pandan juice and take only 200 ml, then set it aside.
  7. Prepare a bowl, add 300 g of rice flour, 150 g of tapioca starch, and 1/2 tsp of salt, then stir until evenly combined.
  8. Add the cooled coconut milk and sugar mixture.
  9. Stir until evenly combined and the batter is smooth, silky, and free of lumps; if any lumps remain, strain the batter first.
  10. Divide the batter into two equal portions.
  11. Add 200 ml of pandan juice to one portion and stir until evenly combined; if the colour is not green enough you may add green food colouring or pandan paste.
  12. To the other portion add 200 ml of medium-thick coconut milk, then stir until evenly combined.
  13. Grease the moulds thinly with cooking oil.
  14. Pour the green batter into the moulds until they are half full.
  15. Bring water to a boil in the steamer pot.
  16. Steam for about 15 minutes over medium heat; if you use a flat steamer lid, line it with a clean cloth so condensation does not drip onto the batter.
  17. Once the surface of the layer is no longer wet, pour in the white batter until the moulds are full.
  18. Continue steaming for about 20 minutes, or until the cakes are cooked and the surface is no longer wet.
  19. Take the cakes out of the steamer.
  20. Let them cool completely before releasing them from the moulds by loosening them from the sides, so the cakes hold their shape and do not fall apart.
