Ingredients

Kinca Sauce ingredients:

Steps

  1. Prepare a pot and add 150 g wheat flour, 50 g rice flour, 30 g granulated sugar, 1 tsp baking powder and half a teaspoon of instant yeast.
  2. Add 1 egg, then stir until evenly combined.
  3. Pour in 250 ml coconut milk a little at a time while stirring until the batter is smooth, silky and free of lumps.
  4. Strain the batter to make sure no lumps of flour remain.
  5. Add half a teaspoon of pandan paste and stir until evenly combined; if the colour is too pale add 2 drops of green food colouring.
  6. Cover the batter with a clean cloth and rest it for about 1 hour.
  7. For the sauce, prepare a pot and add 1 pandan leaf, 100 g shaved palm sugar, half a teaspoon of salt and 350 ml coconut milk.
  8. Dissolve 1 tsp cornstarch in 30 ml water and set it aside for now.
  9. Cook the coconut milk over medium-low heat, stirring constantly, until it boils and the sugar dissolves so it does not split.
  10. Add the cornstarch slurry, then cook again, stirring, until it boils and thickens, then turn off the heat and let it cool.
  11. After 1 hour, uncover the batter, which will have bubbles on it, add half a teaspoon of salt, then stir until evenly combined.
  12. Heat a non-stick pan over low heat, then pour in about 1 soup spoon of batter without swirling it so it stays in the centre.
  13. Once the holes have all opened up on the surface, cover the pan so it cooks faster; there is no need to flip it.
  14. Leave it until the top dries out, then lift the serabi out.
  15. Turn the heat down to the very lowest, then cook the rest of the batter the same way until it is used up.
  16. Serve the serabi with the palm sugar coconut sauce.
