White Layer Ingredients:

Steps

  1. Put 3 medium eggs and 100 g granulated sugar into a bowl, then stir until evenly combined.
  2. Pour in 250 ml medium-thick coconut milk and 1 tsp pandan paste, then stir until combined and the sugar has dissolved.
  3. Add 20 g all-purpose flour, then stir again until the batter is evenly combined.
  4. Strain the batter to make sure there are no lumps.
  5. Pour the batter into moulds until three quarters full; this recipe makes about 7 moulds.
  6. Steam in a steamer whose water is already boiling for about 15 to 20 minutes over medium-low heat, and wrap the steamer lid in a clean cloth.
  7. While it steams, put 2 tbsp granulated sugar, 10 g rice flour, 10 g cornstarch and a pinch of salt into a pot.
  8. Pour in part of the 400 ml coconut milk while stirring until there are no lumps, then add the remaining coconut milk and stir again until even.
  9. Cook over low heat, stirring constantly, until it boils and thickens slightly, then turn off the heat.
  10. Once the first layer has set, pour the second layer on top, not too full so it does not overflow while steaming.
  11. Steam again for 10 minutes over low heat until cooked, then lift the cakes out of the steamer.
  12. Let the cakes cool, then chill them in the fridge for about 1 hour since they taste better cold.
