Steps

  1. Put 80 ml water and 250 g finely shaved palm sugar into a pot.
  2. Cook over medium-low heat, stirring constantly, until the sugar dissolves, boils and thickens.
  3. Turn off the heat, then strain the palm sugar syrup to remove any impurities.
  4. Pour the palm sugar syrup into serving cups, about one ladle each, then set aside.
  5. For the green layer, put 8 tbsp rice flour, 1 1/2 tbsp tapioca starch, 2 1/2 tbsp granulated sugar and 1 tsp salt into a pot.
  6. Pour in 400 ml coconut milk and stir until evenly combined with no lumps of flour.
  7. Add 400 ml pandan juice made from 10 pandan leaves, then stir again until evenly combined.
  8. Cook over low heat, stirring constantly, until the batter boils, bubbles up and thickens, then turn off the heat.
  9. Pour the hot green batter into the cups over the palm sugar syrup, leaving a little room for the next layer.
  10. For the white layer, put 7 1/2 tbsp rice flour, 2 1/2 tbsp tapioca starch, 2 tbsp granulated sugar and 1 1/2 tsp salt into a pot.
  11. Pour in part of the 750 ml coconut milk while stirring until there are no lumps, then add the remaining coconut milk and 1 pandan leaf.
  12. Cook over low heat, stirring constantly, until it boils, bubbles up and thickens, then turn off the heat.
  13. Pour the hot white batter over the green layer to fill each cup, and repeat until all the cups are filled.
  14. Serve the kue jongkong warm, or chill it first since it tastes even better cold.
