Ingredients

For the coating:

Steps

  1. Prepare a bowl and add 100 gr of wheat flour.
  2. Add 100 gr of tapioca flour.
  3. Add 100 gr of granulated sugar.
  4. Add 400 ml of pandan juice made from eight pandan leaves blended with water.
  5. Stir the batter until evenly combined, the sugar has dissolved, and there are no lumps.
  6. Strain the batter to make sure there are no lumps.
  7. Brush the moulds thinly with cooking oil.
  8. Transfer the batter into a jug so it is easier to pour.
  9. Pour the batter into the moulds, not right to the top, just three quarters full.
  10. Heat the steamer until the water boils, then put in the moulds filled with batter.
  11. Steam for about 15 minutes over medium heat, lining the steamer lid with a clean cloth so condensation does not drip into the batter.
  12. After 15 minutes, open the lid and take the cakes out of the steamer.
  13. Let the cakes cool, then do the same with the rest of the batter.
  14. For the coating, prepare 100 gr of grated coconut and 1 pandan leaf, sprinkle over 1/2 tsp of salt, and stir until evenly combined.
  15. Steam the grated coconut for about 10 minutes so it does not spoil quickly.
  16. After 10 minutes of steaming, take the coconut out of the steamer and let it cool.
  17. Once the cakes are cool, release them from the moulds with the help of a spoon, a bamboo stick, or a satay skewer.
  18. Roll the cakes in the steamed grated coconut until coated, then repeat until all of them are done.
