Ingredients

Steps

  1. Put 260 g all-purpose flour into a bowl.
  2. Add 60 g granulated sugar, 1 tsp baking powder, 1 tsp instant yeast, and a pinch of salt, then stir until evenly combined.
  3. Pour in 150 ml room-temperature water, then knead the dough.
  4. Move the dough onto a work surface dusted with a little flour so it does not stick.
  5. Knead the dough for about 10 minutes until elastic, using a motion like washing clothes.
  6. Once elastic, roll the dough into a ball.
  7. Put the dough in a bowl, cover with plastic wrap or a clean cloth, then rest it for about 2.5 hours until doubled in size.
  8. After 2.5 hours uncover it, then knead the dough again for about 2 minutes on a surface dusted with a little flour.
  9. Divide the dough into 10 portions weighing about 45 g each.
  10. Place the dough in a container, cover with a clean cloth, then rest for about 15 minutes.
  11. After 15 minutes uncover it, then roll each piece of dough in white sesame seeds until the whole surface is coated.
  12. Roll the dough flat with a rolling pin, then place it on a plate.
  13. Do the same with all the dough, and cover the unfried pieces with a clean cloth so they stay moist.
  14. Heat oil in a wok, then add the dough and fry over medium heat, not too high and not too low.
  15. Once the dough starts to float, flip it every five seconds so it puffs up, and fry until golden yellow.
  16. If this is your first time frying it, fry one piece first to gauge the heat, and once it is right fry 2 to 3 pieces at a time.
  17. Strain the oil if any sesame seeds are left behind so the oil stays clean.
  18. Fry the remaining dough the same way as before.
  19. Once the cakes have puffed up and turned brown, lift them out and drain, then serve while warm.
