Ingredients

Steps

  1. Put 4 eggs, 2 egg yolks, 100 g of granulated sugar, and 1 teaspoon of emulsifier into a bowl.
  2. Beat the batter on maximum speed for about 12 minutes until it is risen, thick, and holds a ribbon.
  3. Once it holds a ribbon, turn off the mixer, then add 100 g of wheat flour and 1 tablespoon of milk powder, sifting them in.
  4. Beat briefly on the lowest speed until just combined; do not overmix.
  5. Turn off the mixer and fold again with a spatula so the batter and flour are completely combined.
  6. Add 120 g of melted margarine, then fold from the bottom upwards until there is no liquid settled at the bottom of the batter.
  7. Take out a little batter to colour later, then set it aside.
  8. Brush a 21 x 21 cm tin thinly with margarine, then dust it thinly with wheat flour.
  9. Pour the batter into the tin, then tap the tin a few times so the trapped air can escape.
  10. Add food colouring as needed to the batter you set aside and stir it with a toothpick, then pour in a little mocha paste and stir again with a toothpick.
  11. Decorate the surface of the batter in the tin as you like using the coloured batter.
  12. Bake in an oven preheated for about 10 minutes, with the tin on the middle rack, at 175 degrees Celsius with top and bottom heat for about 35 minutes, or adjust for your own oven.
  13. Check it with a toothpick; if no batter sticks to it and the cake has pulled away from the sides of the tin, it is done.
  14. Take the tin out of the oven, run a knife around the edges, then turn the cake out of the tin.
  15. Cut the cake as you like and serve.
