Meat Floss Sponge Cake (Bolu Abon)

  1. Prepare two 20 x 30 cm tins, brush the sides with margarine, then line them with nonstick baking paper.
  2. Weigh the whole eggs and egg yolks and put them in the mixer bowl with the sugar, salt and vanilla.
  3. Preheat the oven to 170 to 180C.
  4. Whip the egg mixture in a stand mixer until pale, voluminous, thick and it holds a ribbon.
  5. Sift the cake flour, cornstarch, milk powder and baking powder, then fold in half of it until almost combined.
  6. Add the remaining dry ingredients and fold again until evenly mixed.
  7. Take about a quarter of the batter and stir it into the warm melted margarine to make a sacrificial batter.
  8. Pour that mixture back into the main batter and fold briefly until everything is combined with no lumps.
  9. Divide the batter between the two tins by weight, level it, then tap the tins to knock out air bubbles.
  10. Scatter sliced chili, spring onion and black sesame seeds over one of the tins.
  11. Bake in the preheated oven for about 22 to 25 minutes.
  12. Turn the cakes out onto paper so the surface does not pick up a lined pattern, then let them cool.
  13. Mix the mayonnaise with the sweetened condensed milk until smooth.
  14. Spread enough of the mayonnaise mixture over the plain cake layer.
  15. Cover it generously with meat floss.
  16. Pipe more mayonnaise over the floss so the next layer sticks.
  17. Top with the cake layer that has the chili and spring onion, press lightly, then trim the sides and cut into portions.
