Bakery-Style Floss Bread Roll

  1. Mix the bread flour with instant yeast and stir briefly.
  2. Add the sugar, milk powder, and salt, then mix briefly.
  3. Add one egg, then pour in the cold milk slowly while mixing.
  4. Add softened unsalted butter, mix until combined, then raise the speed until the dough is fully developed.
  5. Grease a bowl with butter, shape the dough into a ball, and place it inside.
  6. Cover and rest for 30 to 40 minutes until risen.
  7. Prepare a 28 by 28 cm tin lined with baking paper and lightly buttered.
  8. Turn the dough onto a floured surface and press out the air.
  9. Roll the dough into a square matching the tin, keeping the thickness even.
  10. Move the dough into the tin and fit it to the edges.
  11. Prick the whole surface with a fork so it does not puff up.
  12. Make an egg wash from egg yolk and a little milk, mixing until combined.
  13. Brush the whole surface with the egg wash.
  14. Scatter sliced chilli and spring onion over the top, pressing lightly so they stick.
  15. Sprinkle white sesame seeds on top.
  16. Cover and rest for 35 to 40 minutes until risen.
  17. Preheat the oven to 180 to 190 degrees Celsius with top and bottom heat.
  18. Bake for about 13 minutes only.
  19. Take the bread out, drop the tin, and turn it out onto baking paper.
  20. Cover the bread and weigh it down for 10 minutes so it flattens and rolls easily.
  21. Mix the mayonnaise with condensed milk until combined.
  22. Spread a thin layer of the mayonnaise over the bread and scatter over the floss.
  23. Roll the bread up using the paper, tightening it gradually.
  24. Let the roll rest for 10 to 15 minutes so it holds its shape.
  25. Cut the roll into six pieces about 4.5 to 5 cm thick.
  26. Brush the cut sides with mayonnaise and press on more floss.
