Long John Doughnut Rolls

  1. Mix high protein flour with instant yeast for about 1 minute.
  2. Add the sugar, milk powder, salt, and a little baking powder, then mix briefly.
  3. Add 1 egg yolk.
  4. Pour in cold milk slowly while mixing.
  5. Mix for about 2 minutes until the dough comes together.
  6. Add butter that has softened to room temperature.
  7. Raise the mixer to medium and knead until the dough is smooth and elastic.
  8. Check that the dough leaves the bowl and the surface is smooth and stretchy.
  9. Round the dough so the gas is trapped inside.
  10. Cover and rest for 30 minutes.
  11. Pour 35 g of liquid whipping cream over 70 g of dark chocolate.
  12. Melt briefly in the microwave and stir into a smooth ganache without overheating it.
  13. Beat unsalted butter with condensed milk for the filling.
  14. Add a little salt and vanilla, then beat until pale and fluffy like buttercream.
  15. Roll the risen dough out into a long piece.
  16. Wrap the dough tightly in cling film so it does not dry out.
  17. Freeze for 10 to 20 minutes until the dough is cold but not hard.
  18. Dust with a little flour and roll the dough to about 13.5 to 14 cm wide.
  19. Trim the ends so the dough forms a neat rectangle.
  20. Measure about 4.5 cm strips and cut them with a knife.
  21. Dust baking paper with flour and lay out the pieces one by one.
  22. Rest for about 40 minutes until doubled in size.
  23. Fry over low heat for about 3 minutes per side.
  24. Lift them out and blot the oil away with kitchen paper.
  25. Split each roll lengthwise like a sandwich without cutting all the way through.
  26. Spread the buttercream inside the split.
  27. Spread the set chocolate ganache over the top.
  28. Coat the top with chocolate sprinkles until fully covered.
