Ingredients

Steps

  1. Put 110 g granulated sugar, 1 egg, and half a teaspoon of emulsifier into a bowl.
  2. Add 125 g wheat flour, 100 ml liquid milk, half a teaspoon of vanilla powder, and a pinch of salt.
  3. Beat at maximum speed for about 10 minutes until the batter is white, glossy, risen, and thick.
  4. Take out a third of the batter, add half a teaspoon of mocha paste, then stir until evenly coloured.
  5. Transfer both batters into piping bags so they are easier to pour.
  6. Set out a perforated steamed cake mould, then place paper cups in it.
  7. Pipe the plain and mocha batters alternately in a two to one ratio until the cups are full.
  8. Swirl the surface of the batter with a skewer, keeping to the top only.
  9. Steam over high heat for 15 minutes in a steamer already full of steam, spacing the moulds apart and lining the lid with a clean cloth.
  10. Lift out, release from the moulds, then serve.
