Ingredients

Steps

  1. Prepare a bowl and add 275 gr of granulated sugar.
  2. Add 3 eggs.
  3. Add 185 ml of room-temperature soda water.
  4. Add 300 gr of medium-protein wheat flour that has been sifted to make sure there are no lumps.
  5. Add 1/2 tsp of vanilla powder, not too much or it can taste bitter.
  6. Beat the batter on low speed at first so the flour does not fly about, then turn it up to maximum and beat for about 5 minutes until the sugar dissolves.
  7. Add 1 1/2 tsp of emulsifier.
  8. Keep beating for about 10 minutes at maximum speed until the batter is pale, risen, thick, and holds a trail, then turn off the mixer.
  9. Continue folding with a spatula to make sure the batter is evenly combined.
  10. Set aside a little batter in two separate bowls, about 3 spoonfuls each, and leave the rest white.
  11. Add 1/2 tsp of pandan paste to one portion and stir until evenly combined.
  12. Add some blue food colouring to the other portion and stir until evenly combined.
  13. Prepare perforated steamed cake moulds and line them with paper cups.
  14. Transfer the batter into piping bags, or simply spoon it in.
  15. Pipe the white batter into the moulds, about half full.
  16. Pipe the green batter on top.
  17. Pipe more white batter in until it is nearly full.
  18. Pipe more green batter on top until the paper cup is full.
  19. For the other moulds, you can combine the white batter with the blue batter however you like.
  20. Put the filled moulds into the steamer, spacing them apart so the cakes bloom as much as possible.
  21. The steamer water only needs to be one and a half to two finger joints deep, so there is plenty of steam and the water does not splash into the steamer.
  22. Steam for about 10 minutes over the highest heat, lining the steamer lid with a clean cloth so condensation does not drip onto the batter.
  23. The steamer must be preheated beforehand until the water boils and steams heavily, and do not open the lid until the cooking is finished.
  24. After about 10 minutes of steaming, the cakes are done and have bloomed perfectly.
  25. Lift the cakes out of the steamer; they can be turned out of the moulds straight away while still hot.
  26. Reheat the steamer before using it again, then steam the rest of the batter.
